Hisun infrared cooking at Night Owl

Infrared sits between gas and induction. An element under a glass top glows and radiates heat straight into the base of the pan, so there is no question of whether a pot is magnetic: a clay pot, a glass dish, an aluminium pan or the old steel set all sit on it and work. Six electric models are here, H-IF010 through to H-IF024, alongside ATB102, a single-burner gas stove that uses a radiant plate over the flame.

How to choose

Pick by where the thing will live. An electric plate needs only a socket, which makes it the sensible second ring in a flat where one cylinder already feeds the main hob, or the entire kitchen in a bedsit. The gas version is the one to take where power is the unreliable part, on a boat or in an island house running on generator hours. Remember that the glass top stays hot long after it is switched off.
