Description
A non-stick kadai is the everyday frying and curry pan — deep enough to fry without splashing the hob and wide enough to finish a curry in the same vessel.
The non-stick coating is what makes it a weeknight pan: less oil, and a wash that takes a rinse rather than a scrub. The trade is that a coating is a wearing part. Metal spoons, dishwashers and heating it empty are the three things that shorten its life; wooden or silicone tools and a hand wash will keep it usable for years.
