Prestige Taas kadai and biryani handi

Taas here means two different pans. The Judge Taas kadai — 20cm (37283), 24cm (37285) and 26cm (37286) — are the deep, round-walled pans you fry and temper in. The Biryani Taas are tall handis sold with lids, a Junior at 4L (30732) and a Senior at 5L (30734).

Buy a kadai by diameter and a handi by volume, because they do opposite jobs. A 20cm kadai holds enough oil to fry fish for two without half a bottle going into the pan; step up to 26cm when the curry has to feed the whole table. The handi’s straight sides and close-fitting lid are what let biryani steam on dum without the top layer drying out.
