Prestige Kadai
Prestige kadais, 20cm to 27cm
A kadai is the deep, steep-sided pan that holds enough oil to fry properly and enough height to finish a gravy without it climbing over the edge. Prestige has two shapes here: the Taas kadais at 20cm, 24cm and 26cm, and the flat-base Omega at 25cm and 27cm, with the Platina 24cm Pop Kadai sitting between them.
Which size
Measure the burner before the pan. A 20cm heats quickly and suits two people or a small batch of fries; 24cm and 25cm are the everyday family sizes; 27cm is for frying in quantity and needs a burner wide enough to heat the base evenly, or the middle runs hotter than the rim. A flat base sits steady on an electric hotplate, while the rounded traditional shape is happier over a gas ring or on a trivet.
