Key features
Handi ShapeCurved shoulders and a narrower mouth hold steam in, which is what a biryani or a slow-cooked curry wants.
Non-Stick CoatingRice and biryani lift off the base instead of welding to it.
Non-Stick CareUse wooden or silicone tools rather than metal, wash by hand rather than in a dishwasher, and let it cool before rinsing. Thermal shock and metal edges are what end a non-stick coating early.
Stainless Steel LidA steel lid holds heat for simmering and survives being knocked about, unlike glass.
notGas Only – This is an aluminium handi that has a plain aluminium base. It works on a gas ring and will work on an induction hob.
Description
A handi is the pot for anything that needs to sit and steam: biryani, a slow curry, a pot of rice you want to leave alone. The curved shoulders and narrower mouth trap steam the way a straight-sided pan cannot.
The non-stick interior earns its place here more than anywhere else, because rice at the bottom of a handi is exactly what sticks. Wooden or silicone tools and a hand wash keep the coating intact; metal and a dishwasher are what end it.
Before buying: this handi has a plain aluminium base — gas only, not induction.
