Description
A handi is the pot for anything that needs to sit and steam: biryani, a slow curry, a pot of rice you want to leave alone. The curved shoulders and narrower mouth trap steam the way a straight-sided pan cannot.
The non-stick interior earns its place here more than anywhere else, because rice at the bottom of a handi is exactly what sticks. Wooden or silicone tools and a hand wash keep the coating intact; metal and a dishwasher are what end it.
