Description
A stainless steel kadai is the deep, round-bottomed pan that does most of the frying and most of the curry-finishing in a Maldivian kitchen.
Stainless steel is the point of it. A non-stick kadai is easier to wash but its coating wears, and it does not like the high dry heat a good fry needs. Stainless takes that heat, does not react with the tamarind and tomato that go into a curry base, and lasts. The impact-forged bottom is thick where it counts, which keeps heat even instead of concentrating it in a hot ring.
