Key features
Non-Stick CoatingLow-oil cooking and an easy wash; food releases instead of catching.
Non-Stick CareUse wooden or silicone tools rather than metal, wash by hand rather than in a dishwasher, and let it cool before rinsing. Thermal shock and metal edges are what end a non-stick coating early.
Stainless Steel LidA steel lid holds heat for simmering and survives being knocked about, unlike glass.
notGas Only – This is an aluminium pan that has a plain aluminium base. It works on a gas ring and will work on an induction hob.
Description
A non-stick kadai is the everyday frying and curry pan — deep enough to fry without splashing the hob and wide enough to finish a curry in the same vessel.
The non-stick coating is what makes it a weeknight pan: less oil, and a wash that takes a rinse rather than a scrub. The trade is that a coating is a wearing part. Metal spoons, dishwashers and heating it empty are the three things that shorten its life; wooden or silicone tools and a hand wash will keep it usable for years.
Before buying: this is an aluminium pan with a plain base — gas only, not induction.
