Crepe Makers at Night Owl
A crepe maker is a flat, thermostatically heated plate with a non-stick top and no walls, so batter can be spread right to the edge and lifted off with a wide spatula. The Sonifer SF-3055 is the electric plate listed here; it makes crepes, but most kitchens end up using one for dosa, thin roshi and egg wraps.
Plate diameter sets the size of the round, and the technique is the spreader: pour a ladle at the centre and turn a T-shaped bar once across it. Too much batter and you have a pancake instead of a crepe. Let the plate come up to full heat before the first pour, oil it by wiping with paper rather than pouring, and clean it while it is still warm with a damp cloth.
- Flat non-stick plate with an adjustable thermostat
- Spread thin with a T-bar, lift with a wide spatula
- Handles dosa, thin roshi and egg wraps as readily as crepes
- Nothing to dismantle — it wipes clean while warm
